YUM. This is one of my favorite veggie meals. Even Gary likes it and when it's all veggies and no meat it has to be good for him to give it a thumbs up.
It has carrots, red peppers, cucumber, celery, napa cabbage and apple. I cooked up some rice noodles, make a quick dressing with soy sauce, ginger, lemon juice, salt and pepper and some other spices. again YUM!
